Pistachio Rose Irish Porridge

Here is a simple one for complicated times. Much of the world is in some form of self-isolation, and there are just as meany simple meals needed complicated projects. This one straddles both worlds, since it is, at its heart, a very basic porridge dressed up with the accessories of a broadly-stocked pantry. You can use some or none of these ingredients, and substitute with abandon. What follows is only a pleasant suggestion.

Pistachio Rose Irish Porridge

Serves 2

Ingredients

  • 1/2 cup steel cut Irish oats
  • 2 cups water
  • Pinch salt
  • 2 cardamom pods
  • 1/2 tsp vanilla extract
  • 1/4 tsp rose water
  • 2 tbsp tahini
  • 2 tbsp honey
  • 2 tbsp crushed pistachios
  • 2 edible dried rosebuds

Method

  1. Bring 2 cups of salted water to a lively boil, then add oats and cardamom pods. Cook, stirring often, for 15-20 minutes, or until most of the liquid has been absorbed.
  2. Stir in vanilla extract and rose water, then transfer to serving bowls.
  3. Drizzle honey and tahini over the oats, then add crushed pistachios and crumbled rosebuds.
  4. Top with milk, if desired.
