Here is a simple one for complicated times. Much of the world is in some form of self-isolation, and there are just as meany simple meals needed complicated projects. This one straddles both worlds, since it is, at its heart, a very basic porridge dressed up with the accessories of a broadly-stocked pantry. You can use some or none of these ingredients, and substitute with abandon. What follows is only a pleasant suggestion.

Pistachio Rose Irish Porridge
Serves 2
Ingredients
- 1/2 cup steel cut Irish oats
- 2 cups water
- Pinch salt
- 2 cardamom pods
- 1/2 tsp vanilla extract
- 1/4 tsp rose water
- 2 tbsp tahini
- 2 tbsp honey
- 2 tbsp crushed pistachios
- 2 edible dried rosebuds
Method
- Bring 2 cups of salted water to a lively boil, then add oats and cardamom pods. Cook, stirring often, for 15-20 minutes, or until most of the liquid has been absorbed.
- Stir in vanilla extract and rose water, then transfer to serving bowls.
- Drizzle honey and tahini over the oats, then add crushed pistachios and crumbled rosebuds.
- Top with milk, if desired.
